The Multitasking Mom makes Meatballs!

We can read the books. We can follow that super organized Pinterest woman. We can watch every food channel for inspiration. And one thing never changes.... "What's for dinner?" and how are you going to get it all done with the 5 million other things you have to do before dinner!
In this world of being the "Supermom of Multitasking", I'm always on the lookout for meals. Delicious meals that my house full of guys will eat. It has to be quick, easy & healthy to fit into our busy lives.
I have added this recipe into rotation almost every week, because it fits! We love spaghetti & meatballs. it's a no brainer, but it is also heavy on the carbs.
This recipe has been approved to be packed with protein, light on carbs, heavy on delicious veggies, that everyone can get on board with. As you see I have cut time by purchasing meatballs, buying a jar of sauce instead of making my own, and this turns this meal into a fast winner that anyone can have time to make. Making Zoodles is fun!
"Zoodles & Meatballs"
Ingredients:
2 T Extra Virgin Olive Oil
1 T Organic Butter
2 t Garlic (or more if you like)
2 large Organic Zuccini's
20 Organic Turkey Meatballs
1 Jar of your favorite Organic Pasta sauce
Fresh grated parmesan to taste.
Bread optional. (The teenage guys eat the bread, but us parents always opt out on bread after the lunchtime meal)
Instructions:
Take out your frozen meatballs (I found a great frozen organic turkey meatball at Whole Foods)
Place desired amount in a pot and pore 1 jar of spaghetti sauce over. Cover & cook on low.
While the meatballs and sauce are cooking.....
Make your Zoodles.
Purchase a "As seen on TV Veggeti" (I bought mine at Target for $8)
Heat up the EVOO, Butter & Garlic in a pan and sauce the Zoodles for about 5 minute on medium.
Thats it people! Really.
Then just plate it up all fancy, and boom! You are done! and eating in a flash!
And it's healthy!
